Ib. Fish
1 thsp. lemon juice
1 cup vinegar
1 tsp sugar
2 onion, chopped
1 tsp pimento(allspice)
1 cup carrots,chochos
1/2 cup cooking oil
1/2 tsp salt
1 tsp black pepper |

- Clean fish and sprinkle with lemon juice.
- Season the fish with salt and black pepper.
- Fry fish in cooking oil until both sides crisp.
Set aside in a bowl.
- Boil 1 cup of water in a sauce pan, combine it with
vinegar and sugar.
- Add carrots, chochos, pimento, onion rings and hot
pepper to taste.
- Simmer until ingredients are tender, pour escoveitch
sauce over fried fish, eat after
12hrs.
