Mackerel Rundown
2 Ib. salted mackerel
1 onion,chopped
1 tomato, chopped
8 pt. coconut milk
1 tsp. vinegar
1 hot pepper
1 thsp. lemon juice
  1. Wash and clean mackerel in lemon water.
  2. Soak in hot water for 2 hours to remove excessive salt.
  3. Boil coconut milk until a sweetish custard is formed.
  4. Add onion, tomato, vinegar and hot pepper to custard.
  5. Cut mackerel in small pieces and place in the custard. Served with green bananas.
