Mannish Water
4 Ib. goat's head, tripe and feet
3 gallons water
2 Ib. yam
1 lb.flour
4 stalks escallion
4 sprigs thyme
1/2 Ib. carrots
3 chochos
12 green bananas
  1. Chop meat into small pieces then wash.
  2. Place in a pot with water, add salt to taste. Boil until meat is cooked.
  3. Add yam,bananas, carrots, chochos and seasonings. Cook for 1 hour
  4. Use flour to make dumplings then add to pot.
  5. Simmer until all ingredients are cook
  6. Add more water if necessary. Serve hot.
