Jerk Goat Appetizer

I am doing an appetizer and want to use Jerk Goat. I am thinking of putting the jerk goat on a fried sweet potato crisp, but I need some sort of garnish. Would a mango relish or cilantro sauce be appropriate? Any thoughts? Since I live in the middle of West Texas I wanted to do something a little different than the normal Cabrito we do here with our goats. Thanks

Hey Beejay, I like your jerk goat menu. I want you to try my Mango Chutney sauce with it. Let me know the outcome. Mmm


Mango Chutney

4 lb. green mango, peeled and remove seed
2 lb. brown sugar
1 oz. ginger
2 tsp. salt
1 1/2 lb. raisins
1 oz. garlic
3pt. vinegar
1/4 tsp. Hot pepper

Method

Slice the mango flesh and cut up the raisins and garlic with a sharp knife.
Add all ingredients in a saucepan and simmer on a low flame of fire for about 2hours stir frequently. Cool then serve with your fried sweet potato crisp.

I am going to make the mango chutney, sounds great. Will it make enough for 300? Should I dice the mango small or medium?

I sorry that is too much mouth for the mango chutney sauce. lol I would prefer you dice the mango in small pieces, it work out better and serve more.
