How do I learn how to become a good cook?

I would love to learn how to cook-from scratch. I would love to learn how to make delicious, nutritious, healthy homecooked food. Over the years, I bought literally dozens and dozens of cookbooks. I have no cooking experience. However, most of the cookbooks assume prior knowledge and experience in cooking. And I love to eat! (Especially jamaican foods).

Can anyone offer any cooking tips, secrets, advice for the novice or beginner cook? Can anyone recommend any BASIC, ILLUSTRATED, COLORFUL, INSTRUCTIVE cookbook that can guide me in the rudiments of basic cooking. A cook book that will EXPLAIN WHAT TO DO AND THE RATIONALE OR REASONING behind doing it; e.g. tells what spices to uses, why you wash meats with lime & vinegar, how to marinate meats etc;
Any advice will be greatly appreciated.
