Baked Snapper Fish
5 Ib. Snapper
1 thsp. lemon juice
1 onion, chopped
1 Stalk escallion
1 sprig fresh thyme
1 cup coconut milk
2 tbsp. bread crumbs
1 tbsp. butter
1/2 salt and black pepper
  1. Clean fish and sprinkle with lemon juice.
  2. rub salt and black pepper on snapper.
  3. Chop onion, escallion and thyme. Mix season with butter then rub it on the snapper.
  4. Place in greased ovenproof dish.
  5. Pour coconut milk on fish, sprinkle with bread crumbs.
  6. Bake for 15 to 20 minutes at 350� F.
