Barbecued Chicken
2 whole chickens
2 tsp. sugar
6 tbsp. salt
1 tsp. black pepper
6 cloves garlic
6 stalks escallion
1 sprig fresh thyme
1 tbsp. vinegar
Barbecue Sauce
  1. Cut chickens in quarters, rinse in lime water, drain before adding seasoning
  2. Mix all ingredients of barbecue sauce together in a saucepan. Simmer for 15 minutes and then cool. Set aside.
  3. Cut and rub all seasons on the chicken quarters leave for at least 2 hours (overnight is better).
  4. Pour barbecue sauce over chicken and leave
    to marinate for at least 2 hours.
  5. Put chicken on grill, turn frequently to prevent burning
