Curried Shrimp
2 Ib. fresh shrimps
2 tbsp. butter
2 tsp. lemon juice
2 tbsp. curry powder
2 onions
2 stalks escallion
3 cloves garlic
1 tsp salt
1 small scotch bonnet pepper
1/4 cup oil
  1. Chopped onions, escallion and garlic, place in sauce pan with oil. Add curry.
  2. After approximately 2 minutes, add shrimps, salt and small piece of scotch bonnet. Cook shrimp for about 5 minutes
  3. Mix in lemon juice and butter. Shrimp should be firm but tender.
  4. Serve hot with white rice and potato salad.
