Ackee & Salt Fish
1/2 lbSaltfish
12 Ackees or 1 tin
1/4 Cup oil
1tsp. Black pepper
1tsp. Salt
1 Stalk escallion
1 Onion,chopped
3 Tomatoes, slices
  • Soak saltfish in water for 1hr. Remove skin when finish soaking
  • Place saltfish aside in a pan
  • Prepare ackees for cooking by removing seeds then place in some boiling water with salt for 25 minutes. When finished, drain ackees.
  • Add ackees, onion, tomatoes, escallion and black pepper in a sauce pan with oil for 5 mins.
  • Add saltfish to seasoned mixture. Stir briefly for flavours to blend. Serve hot with dumpling.
